Potential Cariogenicity of Extremely Low Sucrose Containing Diet measured by In Vivo Plaque pH Telemetry


Abstract
Miniature pH glass electrodes were mounted on removable partial denture and used for telemetering the pH of interdental plaque in 1 human subject. The pH glass electrodes were connected to teflon-insulated wires leading to an extraoral recording
system.
In vivo plaque pH telemetry during 14 days showed a low linear increase of cariogenic acid attack in association with a extremely low sucrose diet(0.412 grams/day). During the first seven days, the minimal amount of ingested sucrose was directly
proportional to a small cariogenic acid attack, measured in proton hours and slight relative decrease of enamel microhardness.
During the second 7 days, the minimal sucrose intake corresponded again to a low acid attack. Howeve,r the enamel microhardness decreased much more than expected. The results of the microbial plaque composition by sampling are not available yet.
The expriments with the extremely low sucrose diet will be repeated, replacing the intake pattern of three of the main meals by more frquent intakes of the identical food amount (snacks).
